Lockdown birthday cake

This small loaf style cake is an ideal size to celebrate a birthday during lockdown. It serves up to 4 people, so 2 generous slices each if there's only 2 of you in a household!  This cake is a vanilla sponge filled with strawberry jam and creamy butter icing.

Lemon Cupcakes with sprinkles on top

These lemon cupcakes were made for my colleague, Stephanie `Baby send off' at work. She goes off on maternity leave very soon.   I added lemon juice and lemon rind to both the sponge and butter icing for a lovely zesty flavour. Then added sprinkles on top to finish them off!
