Biscoff biscuit cheesecake

Chocolate Snoopy themed birthday cake

I made a chocolate fudge sponge cake with a Snoopy theme for my sisters birthday. The icing is made with coco powder, icing sugar and golden syrup and is very tasty with a silk smooth finish. Snoopy chocolate birthday cake

Lockdown Lemon drizzle Cake

One of my other half's favourite cakes -the classic Lemon Drizzle cake.  Lemon sponge topped with icing. The icing needs to be slightly cracked for the full effect.  This lockdown is not good for the waistline!! But such things are one of life's pleasures.

Lockdown Plum jam

With a freezer full of plums picked from our tree last summer, I decided it was time to do something with them.  Plus we needed the freezer space for essentials.   Jam and a crumble (with lashings of custard, of course) are two of the best uses for plums.   On this occasion , however I decided to make jam. After searching successfully for jam sugar in the supermarket, I  managed to fill 4 jam jars and 1 miniature jar. This jam is particularity good mixed in with a bowl of porridge for breakfast and sprinkled with cinnamon.
