Jammy Dodger Delights

This lock-down is making me bake, bake and bake. It's keeping me going although not sure about my waist line! I am trying to do lots of one line fitness classes and a daily walk to burn a few calories.   I got this delicious recipe from a excellent baker, who I follow on social media What Jessica Baked Next . The recipe can be found  here . I used Apricot jam and also my homemade BlackBerry jam for the filling. I think any type of jam or even lemon curd would work (next time!). I also played around with the shapes. Hearts and stars look great but as a bit of a chilli queen, I could not resist a chilli pepper as well!

Easter chocolate meringue nests

My Easter meringue nests filled with cream, mini eggs and a touch of shimmer.  Happy Easter!

Chocolate chip cookies

Yummy yum a batch of chocolate chip cookies to keep us going during lockdown.

Fresh naan bread with curry

A winning combination - Cauliflower curry & fresh Naan bread.  Here's the recipe for the delicious curry I made for the   Cauliflower and coconut curry   Cauliflower is really good in a curry. Try it!   The Naan bread is straightforward to make and really worth the time and effort as it tastes so good.  Here's the recipe I use  Naan bread recipe .  Let me know how you get on.

RAW baking bakery!

Trying to look at the positives of lock down, I have been mastering bread-making .  In the last 24 hours I have baked 3 types of bread.  The White tin Loaf - great as toast with butter and  homemade blackberry jam!  Pitta Bread. Great to have as lunch, warmed up and accompanied with houmous and chopped up carrot sticks. Tortilla wraps. We used these with our fajitas for dinner last night. Very quick and easy to make using plain flour and dried yeast.  Here is the recipe I use for pitta bread. 

Double chocolate chip cookies

After I finally managed to get some eggs, I could not resist baking some bits and bobs. As a little treat I made Mary Berrys' Double chocolate chip cookies.  Gosh they are good and give you an instant chocolate hit. Crunchy on the outside and soft and gooey on the inside.  Especially recommended during lock down!
