Mince pies

I have mince pies with a melt in the mouth delicate pastry using egg yolk and ground almonds.They particularity taste good with thick brandy cream. Ummmm...

This is French recipe called Tarte Tatin. It is baked, left to coll down and then served upside down.

Soft marshmallow topped chocolate cupcakes

These cupcakes are really scrummy, particularly if you like marshmallow. The recipe came form the Primrose Bakery cookbook. The marshmallow topping is technically quite hard to make but worth the time and effort as it tastes so soft and gooey. They need to be eaten on the same day as the marshmallow loses its texture quickly.

Foo Fighers 40th Birthday cake for Mandi

Bird Fair 2013

I made a few goodies for our stand promoting REGUA at the bird fair this year. Bristlefront brownies, sharpbill shortbread and forest falcon flapjack were on offer to visitors to this years fair.

I made this giant chocolate cupcake for my chocoholic sister-in-law, Erin. The sponge was chocolate and vanilla marble cake covered in swirls of chocolate butter cream icing. My niece, Tia was desperate for me to cut the cake so she could have a slice!

This is the chocolate marble cake I made for my nephews school fete in the classic Guess the weight of the cake competition. The answer: 13lb and 12oz.

Smurfette Birthday Cake

Made for Molly's 5th birthday party on Saturday. I made a large vanilla sponge filled with jam and lots of tasty butter icing. Oh and a few cupcakes on the side to match!

Giant cupcake - My sisters 40th birthday cake

Hot cross buns

My first attempt at making hot cross buns. I am quite pleased with them although they did take much longer than I thought and I haven't even put crosses on and glazed this batch. Next time! They are very tasty though especially warm from the oven with a touch of butter. Yummy. Happy Easter!

The best pie in the world -lemon meringue pie

My best lemon meringue pie (aka as LMP) to date. The meringue was crunchy on the outside and soft as you bit into it. It's Lee's favourite desert. This is Andrew and Pippa Proudfoot and Lee just before their first bite!
