GUILT FREE EASY PEASY FRUIT CAKE RECIPE


So easy and quick to make and all healthy - no butter, sugar or eggs.  Just lots of fruit, including dates which gives the cake its moistness and sweetness with a citrus twist with the yest of lemon and juice of orange.

Ingredients

225g (8oz)
Cooking dates
275ml (10fl oz)
Water
450g (1Ib)
Mixed fruit
175g (60z)
Self raising flour
1 teaspoon
Baking powder
1 teaspoon
Mixed spice
Grated rind
1 lemon or orange
50g (2oz)
Ground almonds
4 tablespoons
Orange juice

Set the oven to 160°c, gas mark 3. Grease a 900g or 2lb loaf tin.

Put the dates and water in a saucepan and heat gently until the dates are soft, then remove from heat and mash to break up dates. Add all the remaining ingredients and spoon mixture into your loaf tin, leveling the top. 

Bake in the oven for 1 ½ hours, until a skewer inserted into the cake come out clean. Cool a little in the tin, then turn out the cake onto a wire rack.

Enjoy a slice (or two!) of this tasty guilt- free moist fruit cake.

Lemon Cupcakes with sprinkles on top

These lemon cupcakes were made for my colleague, Stephanie `Baby send off' at work. She goes off on maternity leave very soon.   I added lemon juice and lemon rind to both the sponge and butter icing for a lovely zesty flavour. Then added sprinkles on top to finish them off!
