Carrot cake

I love a carrot cake. Its too hot for a cream cheese topping, so I made butter icing and topped the cake with walnuts and cinnamon.  It travelled in the car to its delivery point without melting which was a relief!!

Celebrating environmental success at Kingston University

As part of my work celebration of the annual Green Impact Awards, I made a few classic English cakes 🎂 The classic Butterfly  cakes, which reminds me of my childhood and a mini Victoria sponge.  As my colleague commented, a mini Victoria sponge reminds her of a summer scone with lashings of jam and cream.   Staff celebrated the environmental achievements of the past year at this event.

 To celebrate the quarter finals with England I made a school tray bake style cake topped with the England flag!  And then I made sone sprinkle topped cakes just cos I fancied it!

 Happy first birthday Fitness Forever! An inspirational fitness company offering Chair-based  Exercise Classes and Pilates Classes.  Anna and Karen, who run Fitness forever held a tea party with their clients on Saturday to celebrate their first birthday 🎂 

Bank holiday weekend baking fiesta!

I enjoyed a few bits of lovely baking this bank holiday weekend. We enjoyed Rock cakes - a true classic and easy recipe (see my blog recipe section on how to make them).  1 rock cake is never enough and 2 rock cakes per person hit the spot perfectly with a cup of tea. I then made mini Victoria sponges. So pretty! We took these to a family picnic in our woods in Kent. Yummy 😍. Bring on another bank holiday for more baking treats!

Chloe's 40th Birthday cake

 Happy Birthday to Chloe. Cannot believe she has turned 40! A classic Victoria sponge (everyone's favourite it seems!) filled with jam and buttercream.

Mini egg cheesecake

What better to celebrate Easter with a vanilla cheesecake. I crunched up some mini eggs and mixed them in the cheesecake itself as well as adding mini eggs on top.  For the biscuit base, I used chocolate digestive biscuits.  On reflection,  the classic digestive biscuit base would have been better but I wanted to go with the chocolate theme!

Lemon meringue pie 🥧 😋

A family favourite and the only dessert my husband and I agree on!!  Such a good pudding.  Takes time and effort to make but worth it. 

Red velvet birthday cake

For my niece, Edens 13tj  birthday 🎂 I made a triple layered red velvet cake.  Each layer is filled with vanilla butter icing.

Easter choc chip shortbread

I love Spring and with Easter around the corner, I decided to get my cutting shapes out and make some Easter style shortbread biscuits. To celebrate Fairtrade coffee morning at my work, I used Fairtrade chocolate and sugar in my recipe. I made Chick and Rabbit shaped biscuits!    

Mum's 80th birthday celebrations

Happy big 80th to my mum. As a huge fan of Freddie Mercury,  we used AI to generate a photo of my mum and Freddie and I then used it as a cake topper 🎂!   I made a classic vanilla sponge filled with butter icing and strawberry jam. We had a small family gathering to 🥳 

50th Birthday cake

 A triple layered Victorian sponge cake for a special friend, Caroline 50th birthday.  Despite a transportation issue where the 50 icing stuck  to the lid, I managed to salvage the situation! Butter icing is good for fixing any mistakes or in this case redoing the top of a cake 🎂 

Its beginning to feel like Christmas 🎄

My annual xmas baking has begun! Christmas cupcakes, glitter shortbread, jammy dodgers and my favourite,  millionaire shortbread! These and a few more treats will be part of my Xmas selection boxes.

Packed with bananas, caramel and cinnamon This classic American recipe is a favourite of my nephews, Ellis birthday. I made this cake for his 15th birthday 🎂

 What a great baking day I have had! Christmas cake iced and decorated. Then I made a few mince pies to nibble on with a cup of tea!

Birthday vanilla cheesecake 😋

 I was very pleased when my niece Tia asked for a  cheesecake as her birthday cake. As she admitted it's the first time she's not asked for a chocolate birthday cake ! This recipe mixes fresh  cream, cream cheese and icing sugar . The result is a delicious creamy cheesecake on a biscuit base . Happy 15th birthday Tia! 😊 

Healthy apple protein cake

I thought it was about time I made a no sugar cake and as my friend gave me some apples over the weekend, I found this recipe. It uses apples, maple syrup and cinnamon for the sweeteners and yoghurt to keep the sponge moist and springy. It was surprisingly tasty, especially warm out of the oven. In truth, a dollop of cream alongside would be perfect but of course, this would defeat the idea of the cake being a healthy alternative :) Not forgetting the protein element which is another bonus!

Healthier Homemade Granola

Homemade Granola. I have been meaning to make my own granola for ages, so I am so pleased that at long last I did it and even better, it tastes really good! I like knowing what is exactly in my granola - no hidden sugars, which often happens with bought granola.  Here's the quick and easy recipe I used:- 1 Banana - mashed up 3 tbsp Maple syrup or honey 80g Peanut butter (or any nut butter) 210g mixed unsalted chopped nuts 160g rolled oats 100g dried fruit 1 tsp cinnamon Instructions:- Mix mashed banana, peanut butter & maple syrup/honey. Add chopped nuts, oats & cinnamon to the mix. Spread the mixture thinly on a baking tray. Bake for 20 mins in oven 170c/325f. Once cooled ad the mixed fruit. Store in air tight jar for up to 2 weeks. Delicious with Greek yoghurt!

Marble birthday cake 🎂

 A delicious chocolate and vanilla marble effect sponge. Filled and topped with chocolate butter icing and then finished with some gold sprinkles!
