Bank holiday weekend baking fiesta!

I enjoyed a few bits of lovely baking this bank holiday weekend. We enjoyed Rock cakes - a true classic and easy recipe (see my blog recipe section on how to make them).  1 rock cake is never enough and 2 rock cakes per person hit the spot perfectly with a cup of tea.

I then made mini Victoria sponges. So pretty! We took these to a family picnic in our woods in Kent. Yummy 😍. Bring on another bank holiday for more baking treats!
