So easy and quick to make and all healthy - no butter, sugar or eggs. Just lots of fruit, including dates which gives the cake its moistness and sweetness with a citrus twist with the yest of lemon and juice of orange.
Ingredients
225g (8oz)

Cooking dates

275ml (10fl oz)

Water
|
450g (1Ib)
|
Mixed fruit
|
175g (60z)
|
Self raising flour
|
1 teaspoon
|
Baking powder
|
1 teaspoon
|
Mixed spice
|
Grated rind
|
1 lemon or orange
|
50g (2oz)
|
Ground almonds
|
4 tablespoons
|
Orange juice
|
Set the oven to
160°c, gas mark 3. Grease a 900g or 2lb loaf tin.
Put the dates and
water in a saucepan and heat gently until the dates are soft, then remove from
heat and mash to break up dates. Add all the remaining ingredients and spoon
mixture into your loaf tin, leveling the top.
Bake in the oven for 1 ½ hours,
until a skewer inserted into the cake come out clean. Cool a little in the tin,
then turn out the cake onto a wire rack.
