Boozy Christmas Cake

This year's Christmas cake was one of my best yet. It smelt lovely and boozy - I had used Carribean rum given to me by a friend. The cake was just right, not too moist and cut slices very easily. The chillies i used to decorate together with rosemary from the garden were last minute decoration ideas!

Christmas baking for everyone at work

Today at work, we enjoyed Blondies (filled with white chocolate and some peanut butter), Snow flecked brownies and Glitter shortbread. 

Mince Pies

Today as it was wet and windy I made some mince pies. The pastry is made with ground almonds and uses egg yolk which gives it a nice and delicate texture.  Christmas is coming!!

Chocoholic birthday cake

A chocolate cake, with chocolate butter icing and filled with rolos, minstrels and maltesers!  This is what my niece,  Tia asked for her 8th birthday.

Millionaires shortbread

This is the ultimate indulgence in the world of cakes. I absolutely love them. Highly calorific but truly delicious, I recommend one of these with a cup of coffee anyday (but not everyday!!). The mix of shortbread, with caramel oozing out when you bite into a slice topped with chocolate is so good.

Rainbow birthday cake

For my nephew's 12th birthday I made a rainbow sponge cake with a cake topper of our family dog, Flapjack!

 A strange tradition having to take cakes into work when its your birthday but it gives me a chance to try out a new recipe or two! The passion fruit sponge as well as the Apple crumb cake were both very popular and both were new recipes so I was pleased! Butter shortbread with chocolate chips

Another one of my many favourites. These slices of shortbread are perfect with a cup of tea. The shortbread is buttery and just melt in the mouth with a sip of tea!

A Triple Chocolate Cake

A Triple chocolate cake.  For my brothers birthday, I made a moist chocolate sponge cake and filled it with tasty white chocolate frosting. I sprinkled caramac chocolate on the top. 

Rocky Road birthday cake

This is a cake for anyone with a sweet tooth who loves chocolate. It is filled and topped with shortbread biscuits and marshmallows as well as covered in fudge icing. The chocolate sponge is rich, moist and dark.

Blackberries galore!

I really love blackberries and this year, there are loads to pick. It's been a good year for them with all the heat and sunshine. I picked a small batch on the way home form work and made some blackberry muffins.

Plum crumble Tray-bake

Since I had bucket loads of plums from our garden, I found a really nice and easy Plum Crumble Tray bake recipe. It has a light sponge base, topped with a layer of plums and then a crumble topping to finish, I also added cinnamon to the plums - as I love a touch of a cinnamon.
