Happy Stir up Sunday!

Today is Stir Up Sunday. The last Sunday before Advent.  I made my xmas puddings today, after soaking the fruit is brandy overnight. They are now steaming away in the slow cooker for several hours. This process makes them very moist and full of flavour. Stir-up Sunday dates back to Victorian times, when cooks prepared the Christmas pudding by stirring the mixture and adding silver coins as good luck token!

Banana Loaf with choc chips

This is one of my favourite loaf recipes. Thank you to the Surbiton community fridge project, I used leftover bananas for this recipe 😋 

Kinder chocolate chocoholic Birthday Cake

A chocoholics dream! Chunks of kinder chocolate on the top, along with rich chocolate icing and sprinkled with a spoonful of gold glitter.  A chocolate sponge filled with white chocolate butter icing. As requested by my Niece, Tia for her 14th Birthday Cake. 

Cornish heavy cake

I had a very taste slice of Cornish heavy cake from the excellent bakery on St. Martins Island,  Scilly Isles whilst on a recent holiday. Its similar to the classic Rock cake but a bit more crumbly. 😋 This was my first attempt at making a batch myself.  Very tasty if I say so myself! The extra sprinkle of sugar on the top makes all the difference 👌 

Double choc muffins

Marks and Spencer had sold out of their double choc muffins, so I decided to make my own! I added a lot of dark coco powder to my usual muffin recipe and huge chunks of plain chocolate. It worked. My husband gave me 7.5 out of 10, as opposed to M&S rating 8 out of 10. I'm pleased with that rating as my first attempt!!  To get my rating up, I am told I need to add extra choc chunks on the top of the muffin. No problem!! 

Double choc Brownies

This is my new Brownie recipe. Bursting with both milk and dark chocolate and gooey inside. There is an explosion of chocolate in your mouth as you take a bite.  Delicious if I say so myself!  

Butterfly cakes

These cakes remind me of summer fetes! A classic British cupcake - vanilla sponge filled with butter icing and wings on the top like a butterfly!!

Luscious lemon Drizzle Cake

Another family favourite. Luscious lemon drizzle. A lemon sponge covered in as much lemon icing as possible.  One of your five a day. We did eat this outside in  the garden despite the very cold conditions!   

Olive bread

 After buying a few tasty olive breads in sainsburys,  I thought it was about time I tried to make my own! Using pitted black olives, this recipe was very straight forward. The result - a winner.  Very nice with fresh soup. 👌 

Frozen Eton mess

A new recipe for family to try over Easter,  I made no churn Eton mess ice cream.  It has raspberry coulis and crushed up meringue mixed throughout the ice cream.  Everyone 😍 loved it. 

Wolf themed birthday cake

For my neice, Eden whose a big wolf fan I made a victoria sponge filled with butter icing and jam with a wolf cake topper.  She was happy. Anything wolf themed!

Blueberry muffins

Honemade muffins are delicious and once you have the basic recipe you can add so many different fruits and types of chocolate.  One of my favourites is Blueberry. I also add a sprinkle of cinnamon and a few oats on the top. These were made for a Mind fundraising brunch at work. 

A family favourite - Flapjack

Everyone in my family loves a slice of the classic flapjack. My sister has even named her dog `Flapjack.' 😂 Made with butter, golden syrup, sugar and oats. It's a favourite amongst family and friends.
