ROCK CAKES

This recipe comes from my mother in law, who makes the best rock cakes. This is a true English classic. Delicious and easy to make!

You will need

4 oz margarine

4oz caster sugar

4oz currants/raisins or sultanas

8oz self-raising flour

1 egg

1 tablespoon milk

Baking instructions

Turn the oven to 180

Mix altogether – adding the milk last.

Grease a baking bun tray and place a tablespoon of mixture into each of the 12 bun cases.

Sprinkle some sugar on the top of each cake.

Place into the oven for 15-20 minutes – until light brown on the top.

Leave to cool and then eat. Enjoy!

Happy Stir up Sunday!

Today is Stir Up Sunday. The last Sunday before Advent.  I made my xmas puddings today, after soaking the fruit is brandy overnight. They are now steaming away in the slow cooker for several hours. This process makes them very moist and full of flavour. Stir-up Sunday dates back to Victorian times, when cooks prepared the Christmas pudding by stirring the mixture and adding silver coins as good luck token!
