Lemon Meringue pie

A family favourite Lemon Meringue Pie (or LMP for short). There's never enough to go around, let alone have a second slice! I managed to get a photo of one slice but not the whole pie. Time consuming to make as there are 3 elements and all technical, but definetly worth the time invested. A truly scrumptious pudding.

Lemon Cupcakes with sprinkles on top

These lemon cupcakes were made for my colleague, Stephanie `Baby send off' at work. She goes off on maternity leave very soon.   I added lemon juice and lemon rind to both the sponge and butter icing for a lovely zesty flavour. Then added sprinkles on top to finish them off!
