Soft marshmallow topped chocolate cupcakes

These cupcakes are really scrummy, particularly if you like marshmallow. The recipe came form the Primrose Bakery cookbook. The marshmallow topping is technically quite hard to make but worth the time and effort as it tastes so soft and gooey. They need to be eaten on the same day as the marshmallow loses its texture quickly.

Lemon Cupcakes with sprinkles on top

These lemon cupcakes were made for my colleague, Stephanie `Baby send off' at work. She goes off on maternity leave very soon.   I added lemon juice and lemon rind to both the sponge and butter icing for a lovely zesty flavour. Then added sprinkles on top to finish them off!
