Passion Fruit Mousse


A Brazilian speciality and I appear to have mastered it here in New Malden, which is fabulous! I had to source concentrated passion fruit juice from a Brazilian shop in Epsom, but it was worth it. Jaffa and Helen - I have a portion for each of you when you arrive later today. Toda Bem!

Lemon Cupcakes with sprinkles on top

These lemon cupcakes were made for my colleague, Stephanie `Baby send off' at work. She goes off on maternity leave very soon.   I added lemon juice and lemon rind to both the sponge and butter icing for a lovely zesty flavour. Then added sprinkles on top to finish them off!
